Green bean and almond salad

Ingredients

3/4 cup salted almonds, roughly chopped

500g green beans

3 tablespoons freshly squeezed lemon juice

1/4 cup extra-virgin olive oil

3 cups mixed salad greens (eg spinach, baby beetroot, lettuce)

Directions

1.  Spread out the almonds on a baking tray and lightly roast for 5 minutes.

2.  Lightly steam the beans until just tender, then place in cold water to cool.  Drain well.

3.  Combine the salad greens, beans and almonds.

4.  Whisk together the lemon juice and olive oil and drizzle over salad.
