1c cooked quinoa or brown rice
6 eggs
1c diced vegetables (for example roast sweet potato and pumpkin, capsicum, zucchini, corn, salsa, avocado, spinach, onions, spinach)
Herbs/spices
1. Combine all of the ingredients.
2. Place into well oiled 6-hole muffin tin
3. Bake at 180 degrees C for 30 minutes until golden and set.
