1 cup of frozen peas
1 large cucumber
4 cups of rocket or baby spinach
3/4 cup chopped mint leaves
Zest and juice of 2 oranges
2 tablespoons extra virgin olive oil
1. Cook the peas until just tender. This can be done in the microwave ( high for 2-3 minutes) or blanch the peas in boiling water for 2 minutes. Refresh in cold water to stop the cooking process. Drain well.
2. Cut the cucumber into thin slices.
3. Combine the peas, cucumber, mint and orange zest together in a bowl.
4. Whisk together the orange juice and olive oil with salt a pepper to taste.
5. Combine the salad with the dressing, serve immediately.
