1 can of corn, 410g
2 spring onions
50g flour (any sort, can be gluten free)
1 tsp baking powder
1/4 tsp salt
2 eggs
Oil for frying
1. Put all ingredients except oil into a food processor and whiz to make a batter.
2. Heat a little oil in a large frying pan and drop in teaspoonfuls of the batter. Cook for 1-1.5 minutes in batches until golden on the underside then turn and cook for a further ~1 minute.
3. Drain briefly on kitchen paper before serving.
The corn fritters can be frozen to add to lunchboxes on another day.
