Chicken, broccoli and bacon meatballs


Cooking Time

30 minutes

Yields

20 meatballs

Ingredients

~400g skinless chicken breast or thighs

3 rashers of bacon

2 cups of broccoli

1/2 cup of almond meal

1/4 teaspoon garlic or flavoured salt

Directions

1.  Cut chicken, bacon and broccoli into large chunks.

2.  Place all ingredients in a food processor.

3.  Process until it is finely chopped and combined.

4.  Place tablespoon full, flattened balls onto a baking paper lined baking tray.

5.  Bake at 180 degrees C for 30 minutes, turning halfway through cooking, or until cooked through and golden.

Notes

These freeze really well and are a great addition to a lunchbox with some veges or salad and hummus.
