3 cups of shredded cabbage (could be a mixture of red and white cabbage)
11/2 cups grated carrot
1/2 cup chopped mint
Freshly squeezed juice from 1 lime
2 tablespoons soy sauce or tamari
2 tablespoons extra virgin olive oil
1. Mix the cabbage, carrot and mint in a large bowl.
2. Whisk together the lime juice, soy sauce/tamari and olive oil.
3. Add the dressing to the salad, mix well and serve immediately.
This salad will last in the fridge for 2-3 days, just don't add the dressing until you're ready to serve.
