Apricot and Cashew Bliss Balls

~12 bliss balls

Ingredients

4 Weetbix (can be gluten free)

1 cup cashews

1 cup dried apricots

Directions

1.  Place the Weetbix, cashews and apricots into a food processor and mix until finely chopped.

2.  Add 2-3 tablespoons of water and continue to mix until it comes together in a ball.

3.  Roll large teaspoon-fulls into a ball and refrigerate.

4.  Keep in the fridge for up to one week in an airtight container.

Notes

The original recipe made these into bars, I just found rolling them into a ball nice and easy.  You could also roll them in coconut if you were feeling adventurous :)  Whichever way, they are delicious and not too sweet.  Commercial bliss balls are usually over 50% dates, therefore high in sugar so these are a good alternative.
